Winter melon and seaweed just go perfectly together. This soup is perfect for any day especially on a nice cold day. But even in the summer, the refreshing texture and subtle taste of winter melon is somewhat soothing.

This soup is a great “throw everything in a pot and let it cook” type of soup and really requires very little attention. The longer it cooks, the better it tastes!
Seaweed and winter melon soup
- Winter melon cut into 1” pieces about 2-3 cups
- Small handful of dried seaweed, soaked
- Shiitake mushrooms
- 6-8 cups chicken broth
- 1 package enoki mushrooms
- spring bamboo, boiled
Mix all the ingredients together and heat up in a pot till boiling then cook on medium heat for about 20 minutes. Season with salt to taste
